Asparagus

Asparagus, the harbinger of spring in the garden!  We planted 2100 crowns of Jersey Giant asparagus in 2012.  We harvest about 800 pounds of asparagus each year, usually beginning in late April or early May and running through early June.

Jersey Giant is an all-male hybrid, which prevents it from spreading, and choking itself out (a surprisingly common problem with asparagus!).  It produces large, tender, tasty green spears with a bit of purple tinge.  Best sauteed in butter for about 20 seconds, then sprinkled with Parmesan.  Now that’s spring!
